Porridge & Lingon Berries

Porridge is so simple and yet so good for breakfast.  It has seen an upswing in the past years as the health benefits have been seen. Its a good source of complex carbohydrates, which release energy slowly into the bloodstream. The oats are wholegrain. They have the natural goodness that is absent from processed cereals, and they can lower cholesterol and reduce constipation.

We make our porridge on 1 part oatmeal to 2 parts water plus a pince of salt. I think allowing the porridge to cook at low temperature for about 1 hour gives good result. You do have to add more water if you cook it this long. The porridge is always popular among the Vasaloppet skiers. I always think as I serve these athletes breakfast that they know about what to eat before skiing 90 km in sub-zero temperatures

We do our own lingon berry jam. You put the lingons on the porridge and add some milk. The porridge and the lingon berries really go well together.
